I think google adsense is the best way to monetize sites but most people don't use, I am curious to know reasons?

In early days I started a blog and applied for adsense they rejected. Later not tried much.

I feel that most people either do not use AdSense to monetise their sites, either because they struggle to get their site approved or because they feel it would be wrong to monetise their site.

I see no issues in monetising your sites if you are looking to make enough to run the sites, in which case, AdSense is a great idea.

I think it could be due to the fact that ad-blockers exist and a lot of people use them. So maybe some people don't use adsense because they don't think people will click on any of their ads due to that? Idk, just a guess. It could be various other reasons, but I think it's a mix of many things, including adblockers and other things.
This could also be another reason. This was a worry of mine when I first looked into monetising sites, but I ended up giving it a shot anyway, but despite AdBlockers being a thing; I am still able to make something.

Honestly, it’s because AdSense is not easy to deal with. Getting approval alone can make you give up, especially for Africans. Google will keep rejecting you for “thin content” or “low value content” until they just feel like approach it. That is why so many people just prefer affiliate or sponsored posts. I had experiences a lot with adsense but now I understand their gimmick and that's why my sites are showing ads.
